We were a party of three that evening, out to celebrate a friend’s birthday. Jaguar Restaurant had been suggested, a place known for its Latin soul and coastal character. To start, we were greeted with canchitas—a crunchy, lightly salted Peruvian snack made from a special variety of corn. Traditionally served alongside ceviche, they’re rustic, simple, and perfect for conversation. As we shared stories and laughter, these tiny kernels anchored us in Latin tradition.
For my entrée, I ordered the Fried Rice Chaufa with chicken, a dish rooted in chifa—the fusion of Chinese and Peruvian cuisine born out of history and migration.
